Create a vibrant menu inspired by Puerto Rican cuisine with a touch of European flair.
In this hands-on team building cooking class, Chef Todd teaches your group how to prepare bold Puerto Rican dishes with a nod to the cuisine's Spanish influence. Practice a range of skills from making sauces and stews to frying, braising and more.
Begin by making croquettes with béchamel sauce followed by stewed red beans over rice. The centerpiece of the meal is hearty braised chicken in soffritto sauce. For dessert, make one of Spain’s signature desserts, crema Catalana, a citrus custard spiced with cinnamon and topped with caramelized sugar.
Guests are welcome to bring wine and beer to enjoy during the class.
Croquettes de Jamon
With milk, roux, ham and panko bread crumbs
Braised Pollo in Rich Soffritto Sauce
With chicken thighs, cilantro, olives, peppers, tomato sauce and cilantro
Habichuelas y Arroz
With garlic, tomato sauce, red beans, cilantro and a ham base
Cream Catalana
With egg yolks, milk, orange zest, lemon, cinnamon and sugar
