Prepare the tortellini. Fill a medium saucepan with water and bring it to a boil over medium heat. Stir in the sea salt. Add the tortellini and cook according to the package’s instructions, until al dente.
While the pasta is cooking, prepare the alfredo sauce. In a medium saucepan over medium heat, make a roux by combining the flour and butter. Continuously stir until it forms a paste. Cook for about 3 minutes, until the starchy taste is gone.
Add the chicken stock slowly, one large splash at a time, while continuously stirring.
Slowly add the milk in the same splash-by-splash way, followed by the dry white wine.
Add the Parmesan, fontina, mozzarella, sea salt and black pepper. Stir the sauce until smooth and season to taste.
Add the drained tortellini to the alfredo sauce and toss to coat.
Garnish with parsley and serve. Enjoy!
