Measure and prep all ingredients. Make sure to wear gloves when deseeding the peppers. In a mixing bowl, add the diced tomatillos, chopped guajillo pepper, diced red bell pepper, diced ancho pepper, cilantro, lime zest and juice, scallions and salt.

Mix to combine thoroughly. Seal the bowl with plastic wrap and transfer the mixture into the refrigerator. Let the mixture sit for at least 2 to 4 hours for the flavors to develop. (See notes 3.)

Serve with tortilla chips, on nachos or any grilled proteins. Enjoy!

Notes:
- Do not use a food processor to chop the tomatillos or they will turn into mush.
- Adjust the recipe for more lime if your limes are dry and not juicy.
- This recipe is great to make the day before.
