Preheat the oven to 350°F. In a large Dutch oven over medium heat, melt the butter. Add the sliced andouille sausage and cook until browned.

Add the chopped onion, red bell pepper, celery stalks, garlic cloves, salt and pepper. Cook until softened.

Stir in the minced garlic, dried oregano, bay leaves, marinara sauce, chicken (or vegetable) stock, hot sauce and long grain rice. Bring to a boil. Cover and transfer to the preheated oven. Bake for 30-40 minutes.

While the rice is cooking, prepare the shrimp. Season the shrimp with the Cajun spice.

Heat the olive oil in a skillet over medium heat. Add the shrimp and sauté until cooked through. Set aside.

Remove the Dutch oven and stir in the shrimp. Garnish with the chopped green onions and serve with additional hot sauce. Enjoy!
