Brine the shrimp. In a small bowl, mix the shrimp, salt and baking soda together. Cover the bowl and refrigerate for 30 minutes.

In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, brown sugar, cornstarch, ginger and garlic. Set aside.

In a large skillet over medium heat, the vegetable oil.

Once the oil is hot, cook the shrimp for 1-2 minutes on each side. Do not overcook the shrimp. Remove shrimp from the skillet and set aside.

Add the broccoli florets and sliced onion to the skillet. Sauté until crisp-tender, about 3-5 minutes.

Add the shrimp back into the skillet.

Add the reserved soy sauce mixture to the skillet and cook until the sauce is slightly thickened, about 1 minute.

Garnish with scallions and sesame seeds. Serve with a side of rice. Enjoy!

Notes:
Use Diamond Crystal kosher salt. If using Morton's kosher salt, use half the amount.
