Preheat the oven to 425°F. Thoroughly grease a sheet pan with nonstick spray. Mix the dry ingredients. In a bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
Mix the wet ingredients. In a separate bowl, whisk together the eggs, buttermilk, melted butter and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and combine with a silicone spatula just until combined. You may see lumps but that is okay.
Pour the pancake batter into the prepared sheet pan.
Top the first third with chocolate chips and strawberries. The second third with blueberries and bananas and the final third with raspberries and white chocolate chips. (See notes 1.)
Bake for 14-16 minutes or until a toothpick inserted in the center of the cake comes out clean. Slice and serve with a side of maple syrup. Enjoy!
Notes:
- Any combination of toppings can be used here including Nutella, peanut butter and coconut flakes.
