In a large bowl, combine the ground pork, crushed garlic, chopped cilantro, sugar and soy sauce. Season with salt and pepper and mix well.
Divide the pork into eight portions. Dampen your hands with water (to prevent sticking) and mold each portion into a ball.
Preheat the grill, stovetop grill pan or broiler. Stick a length of lemongrass or skewer halfway into each ball. Press the meat mixture around the lemongrass to make an elongated meatball shape.
Cook the moo ping on a hot grill, stovetop grill pan or under the broiler for 3-4 minutes on each side or until cooked through.
Serve with the chili sauce for dipping. Enjoy!
Notes:
Variations:
- You can use ground beef, ground turkey or a combination of both.
- Use bamboo skewers instead of lemongrass.
- Serve as a meal with steamed jasmine rice.
Do Ahead:
- The ground pork mixture can be made 5 days ahead and refrigerated.
