Measure and prep all ingredients. In a mortar and pestle, place the garlic, cumin seeds and salt. Smash the ingredients together until a paste forms. (See notes 1.)
Add the avocadoes to the bowl and gently smash each one against the side of the mortar. Continue until a fluffy texture is achieved.
Mix in the lime juice. (See notes 2.)
Fold in the minced Roma tomato, chopped cilantro, minced jalapeno and minced red onion with a spatula. Mix until well combined.
Enjoy with chips or any Mexican cuisine!
Notes:
- If you do not have a mortar and pestle, a coffee grinder could be used to make the paste. You can also use a spoon to smash the avocadoes in a bowl, patting each one until it breaks up. We are trying to achieve a fluffy texture by breaking up the cells.
- Get the most juice out of your lime by massaging it on a counter first or microwaving it for about 30 seconds. This will double the yield.
