Measure and prep all ingredients.
In a pot over medium heat, heat the coconut oil. Sauté onions until translucent, then add garlic and green chilies.
Add diced chicken or shrimp and cook until browned.
Stir in curry powder and cayenne pepper.
Pour in coconut milk, diced tomatoes, pineapple chunks, and chopped bell peppers. Season with salt and pepper to taste.
Simmer for 15-20 minutes until the flavors meld, and the meat is cooked through.
Adjust seasoning if needed. Serve the green chili stew over cooked rice and garnish with cilantro. Enjoy!
