Make the cucumber relish. In a small bowl, whisk together the olive oil, lemon juice, salt and pepper.

Add the feta cheese and the cucumber to the bowl and toss to coat. Set aside. (See notes)

Season the chicken with red chili flakes, dried oregano, pepper and salt.

In a small sauté pan over medium heat, heat the olive oil.

When the oil is hot, add the chicken to the pan. Cook one side until golden brown, flip the chicken and reduce the heat to low. Allow the chicken to finish cooking, about 10-12 minutes.

Add the minced garlic and remove the pan from the heat so the garlic doesn't burn. Cook for 1 minute.

Top with the cucumber relish and serve with lemon orzo pasta or couscous. Enjoy!

Notes:
The cucumber relish can be made one day ahead. The flavors of the relish will develop better overnight.
