Prepare the wet ingredients. In the bowl of a stand mixer fitted with a paddle attachment, beat the butter over medium-high until lightened, about 1-2 minutes.

Add the granulated sugar and beat until light and fluffy, about 3-4 minutes.

Lower the speed to medium. Incorporate the eggs and egg yolk one at a time.

Mix in the vanilla extract.

Lower the speed to low and add the dry ingredients and mix just until combined. Cover the bowl with plastic wrap and refrigerate for 1 hour.

While the dough is chilling, prepare the crumb topping. In a bowl, combine the unsalted butter, brown sugar, granulated sugar, ground cinnamon, all-purpose flour and salt.

Work the crumb topping with your fingertips until crumbs form. Refrigerate until ready to bake.

Preheat the oven to 325°F. Line two baking sheets with parchment paper. Portion the cookie dough into tablespoon-sized balls. Space the cookie balls two inches apart.

Prepare a small bowl of all-purpose flour. Dip the back of a teaspoon or your finger to the all-purpose flour and then create indentations in the center of each cookie ball.

Fill the indentation with the crumble topping. Reserve the remaining crumble topping.

Bake for 5-6 minutes. Remove the baking sheets from the oven and top with the remaining crumb topping in the center of each cookie. (Some of the crumb topping will have baked into the cookie.)

Return the sheet pans to the oven and bake for an additional 5-6 minutes or until the edges and the bottoms are lightly browned.

Remove the cookies to a cooling rack and let them cool completely.

While the cookies are cooling, make the icing. In a bowl, combine the powdered sugar, melted butter, milk, vanilla extract and salt until smooth. If it’s too thick, add a little more milk and if it’s too thin, add a little more powdered sugar. Let the icing set for about 10 minutes.

Drizzle the icing over the cookies either by using a spoon or a piping bag for a neater drizzle.
