Prepare the blackening seasoning. In a bowl, whisk together the chili powder, smoked paprika, ground cumin, cayenne pepper, garlic powder, black pepper and salt.
Prepare the mahi mahi. Cover each mahi mahi fillet completely with the blackening seasoning.
Heat a large skillet over medium heat. Once hot, add the olive oil and the seasoned mahi mahi. Cover the skillet and cook the mahi mahi for about 5 minutes. (See notes 2.)
Remove the cover and flip over the fish. Cover and cook for 2-3 minutes or until the fish is opaque throughout.
Garnish with finely chopped parsley and serve with lemon wedges. Enjoy!
Notes:
- As with most fish recipes, the best quality mahi mahi will result in the best tasting dish.
- Do not overcrowd the pan and cook the fillets in batches if needed.
