Measure and prep all ingredients.

In a medium saute pan over medium heat, pan sear the pieces of bacon until browned, about 7-8 minutes.

Pour the excess bacon fat into a small bowl off to the side and reserve. Remove and reserve the bacon bits into another bowl.

Add the diced onion to the pan and sauté until translucent, about 4-5 minutes.

Add the minced garlic and sauté for 1 minute.

Add the reserved bacon, 2-3 tablespoons of the bacon fat along with the coffee, vinegar, maple syrup, brown sugar and water.

Bring the mixture to a strong simmer while stirring.

Lower the heat to low and continue to cook, stirring occasionally, until the mixture has a thick and syrupy consistency, about 30-45 minutes.

Stir in a few dashes of Tobasco sauce, to taste.

Transfer the mixture into a food processor and puree until the pieces of bacon have been broken down into small pieces.

Enjoy as an accompaniment to a charcuterie board or slathered on a roast beef sandwich.

Notes:
- Makes a great holiday or hostess gift. To gift, package the bacon onion jam in a decorative jar tied with a ribbon.
