Join Chef Stefano for an online cooking class that explores two beloved culinary traditions from Austria and Sardinia. This hands-on session will guide you through the art of making the iconic Sacher cake, a rich chocolate dessert with a delicate balance of cocoa, oranges and cream. You’ll focus on key techniques for achieving the perfect texture, layering and decoration.

Alongside this indulgent treat, you’ll craft Sardinian culurgiones, a beautifully folded pasta filled with potatoes, ricotta and herbs. Known for its intricate shape and distinctive flavor, this dish is as fun to make as it is delicious to eat. Get ready to refine your skills and enjoy a class filled with creativity, tradition and flavor!

  • Electric whisk
  • Pastry metal disk of 8-9 inches ø, OR 8 pastry metal disks of 3 inches ø OR same sizes silicon molds
  • Baking paper
  • Flat baking tray
  • Sac a poche with tips
  • 1 cooking pot of 8-10 inches ø
  • 2 small pots of 5-6 inches ø each
  • Chopping board
  • Chef knife
  • Microplate
  • Non-stick Frying pan
  • Rolling pin
  • 2 small/medium sized mixing bowls of 6-9 inches ø

Prep Work Details

- Boil potatoes until soft (until skin cracks or until a knife can easily cut through) - Leave ricotta in the fridge, sitting in a sifter/strainer/muslin cloth overnight.

Loved my class with Stefano. He was charming, patient and very gracious with all of us, accommodating a variety of skill levels in his students. We made the Cannelloni and Panna Cotta, and he took his time explaining each step and checking in with us to see how we were doing. I look forward to doing another class with him!
