Next, master the art of smoking a brown sugar-rubbed pork tenderloin. This will be topped with fresh peach and roasted serrano salsa. While this concoction smokes to perfection, prepare roasted garlic and herb potatoes. Dessert is a tropical take on grilled pineapple, which is topped with a mezcal-lime glaze and served with ice cream.

We flew in the night of the class and almost skipped it cause we were tired from traveling, boy are we glad we didn't. Each dish was a work of art, and the intimate setting made it feel like a private dining experience. Ron's friendly teaching style and the fantastic atmosphere created the perfect recipe for a memorable night.
