But the flavor balance isn’t quite right. Rather than the rich, high-cacao flavor that you would hope for in a chocolate ice cream that tends towards a more bittersweet flavor. Some even complain that this one has a cocoa powder aftertaste. Whoops. 

However, there’s one big advantage to this Insomnia Cookies ice cream flavor: it’s versatile. It pairs well with virtually every cookie flavor and topping that the brand offers, and all of that extra sweetness offsets the slight bitter aftertaste of the ice cream well. Along with vanilla, it’s a classic choice for an ice cream sandwich or a brownie à la mode.

7. Minterstellar 

This one gets a few points for adhering to Insomnia Cookies’ space-themed naming scheme in a way that both makes sense and makes the standard mint chocolate chip flavor sound more interesting. However, it’s a rather unfortunate combination of well-tread (every brand makes this flavor) and polarizing (you either love mint or hate it). This might be a contentious ranking if you love a classic mint chip scoop, but we stand by it. 

That said, there are two interesting things about this Insomnia Cookies ice cream flavor. Firstly, it forgoes the green food coloring that most versions of mint chocolate chip use. If you’re not into food dyes or even if you just find the usual bright green off-putting, you’ll no doubt be into this change. And the other is that instead of chocolate chips, it uses chocolate chip cookies.

But for others who like a little more texture in their scoop, this change might be the best thing about Minterstellar. So really, where you’d rate this Insomnia Cookies ice cream flavor depends half on your opinion about mint-flavored things in general and half on how staunch a traditionalist you are.

This Insomnia Cookies ice cream flavor has a lot going on. You might have guessed that just by looking at it — it’s purple. That sort of color scheme tends to be a dead giveaway that a flavor is going for broke.

Even so, it’s surprising how much Insomnia is packing into this very original flavor. Dreamweaver brings double-chocolate cookies, fudge swirls and white chocolate stars together in s’mores ice cream, which is, of course, dyed purple. A lot, no? Perhaps just a bit too much.

There’s nothing wrong with any of the mix-ins here. All of them are fairly standard ice cream fillers, and none of the Insomnia Cookies ice cream flavors blatantly clash with one another. But there comes a time in any ice cream flavor’s life where it’s got to stop adding new mix-ins, and Dreamweaver reached that point a few additions ago. Is there anything wrong with Dreamweaver, flavor-wise? Not really. But it sinks itself by trying to do too much.

None of the Insomnia Cookies ice cream flavors are outright bad — the brand holds itself to a pretty high standard, all told. But this one gets the automatic bottom spot simply by having a little too much going on.
