Cooking Class - A Fermentation Presentation

What You’ll Do

Chef Christine shows you how to get those helpful bacteria going with three different pickles.

Fermented foods are ancient and appear in many of the world's cuisines. Learn the basics behind home fermentation techniques. Start off with preserved lemons in salt that lend a special flavor to Moroccan and Middle Eastern dishes. Next, make Korean kimchi with Nappa cabbage, carrots, jalapenos, green onions, garlic and ginger. Finally, learn to make pineapple vinegar from the core and peels of the pineapple, plus oregano and red pepper flakes for Salvadoran cabbage relish, or curtido, made from fermenting red cabbage in pineapple vinegar, salt and caraway seeds.

Guests are welcome to bring wine and beer to enjoy during the class.

A private caterer with over 10 years of experience running pop- up cafés, catering large events, and intimate dinner parties, she is committed to teaching and cooking. After culinary school, Chef Christine spent time on an organic farm in Italy where she learned how to make artisan salami and prosciutto. She looks forward to teach you her tips and techniques!

I would highly recommend taking Chef Christine's cooking class. She is an amazing chef and teacher. Every dish on her menu is delicious. Her Coquilles st. Jacques is worth taking the class, it is amazing. You will have such a fun time cooking, learning and laughing with Chef Christine.
