Cooking Class - Classic Basque Brunch

What You’ll Do

A hearty feast with a nod to the cooking traditions of northern Spain and France.

Chef Gavin gives brunch a twist with this menu incorporating ingredients common to the Basque region known for its preserved meats and fish, spice, and cheeses.
You will learn how to prepare some familiar favorites with a nod to Basque-country such as eggs benedict featuring ham-wrapped cod and duck eggs served with hollandaise sauce and peppers, and a green salad of arugula and tomato with spicy chorizo sausage and sheep's milk cheese. For dessert, the class will construct a traditional Etxeko Biskotxoa, an impressive cake filled with rich pastry cream.

Guests are welcome to bring wine and beer to enjoy during the class.

Chef Gavin gives a true taste of Idaho with his menu – from the elk to the huckleberries, morels to the nod to the Basque culture with the chorizo salad. The ingredients were super-premium and fresh. So fresh, in fact, that same came from the garden right on the alley. How cool is that? Whether new to Boise, or a true local, this class is sure to please!
